Yes, you read that right — keto fruit pizza! This is a low carb version of that delicious fruit pizza made of a sugar cookie crust, sweet vanilla frosting, and loads of fruit!

Aside from my favorite strawberry lemonade (which I’m working on a keto version of!) fruit pizza was a favorite summer dish I was really missing.

This is my take on a healthy fruit pizza, and it’s a recipe everyone can enjoy. Take this to your next picnic or bbq, it’ll be gone in minutes!

At first glance, you may think that a fruit pizza is off limits for a keto or low-carb diet. However, I believe the best approach to nutrition or any diet is moderation. Fruits do have carbs, but instead of saying you cannot have them, I advocate moderation instead.

For this recipe you will need:

  • Butter
  • Almond flour- Anthony’s is a brand I’ve had a lot of success with!
  • Keto-friendly sweetener- I used Swerve
  • Vanilla extract
  • Cream cheese
  • Heavy cream
  • Almond milk
  • Strawberries
  • Blueberries
  • Blackberries

How to Make Keto Fruit Pizza

This fruit pizza crust is made from the same sweet almond flour base I use for my Keto Lemon Bars. It is a simple mixture of butter, sweetener, vanilla extract and almond flour pressed onto a pizza pan and baked until lightly browned.

Then, we top it with a sweet vanilla cream cheese frosting that complements that delicious almond flour crust perfectly!

Next comes the controversial part, the fruit. If you are on keto you know it is all about your net carb consumption and fruit happens to have quite a few carbs in it. For this pizza, I stuck with blueberries, blackberries and strawberries.

What fruit can I have on keto?

I used blackberries, strawberries, and blueberries to make this easy fruit pizza recipe. However, you may use any keto-friendly fruits you’d like such as raspberries or shredded coconut.

How Long Does Fruit Pizza Last?

I recommend serving this healthy fruit pizza within 24 hours of assembling it. However, it will last up to four days in the fridge.

Note that the crust will soften over time as the frosting and fruit juices sink into it.

Tips for Making Keto Fruit Pizza

  • The frosting also makes a good fruit dip if you want to make extra for any additional fruit you may have.
  • To keep the fruit to a minimum, I sliced the strawberries very thinly. I actually only used 3 strawberries for this entire pizza.
  • By thinly slicing the strawberries and spacing the fruit out a bit, you’ll be able to keep the carbs low and still enjoy a summer favorite!

Ingredients

For the Crust

  • 3-4 large strawberries sliced thinly
  • 1/2 cup blueberries
  • 1/4 cup blackberries

Instructions

  • Preheat the oven to 350 degrees.

  • In a bowl combine the melted butter, almond flour, sweetner, and vanilla extract until a soft dough forms.

  • Spray a pizza pan or baking sheet lightly with cooking spray or parchment paper to make it easier to slice and remove.

  • Carefully press the crust into an even layer. Tip: I place a silicone baking sheet on top of the crust and press or roll the dough into an even layer and then carefully, slowly peel the silicone off the dough. My crust is between 10-11 inches in diameter.

  • Bake the crust 6-7 minutes until lightly browned and completely set. BE CAREFUL NOT TO OVERCOOK. Cooking time may vary slightly depending on how thick you press your crust.

  • Allow crust to cool.

  • In a food processor, blender or with a hand mixer combine the cream cheese, sweetner, cream, almond milk and vanilla and blend or mix until smooth.

  • Spread the cream cheese frosting on the crust and top with fruit

Notes

Please note the crust is an almond flour base. Almond flour is a courser grain than regular flour and can tend to crumble. To help you can bake your crust on parchement paper so it is easier to remove from the pan.

You can also place in the freezer 10-15 minutes before slicing and serving and this will help come out with clean slices.
