This Balsamic Broccoli Slaw recipe is packed with fresh, bold flavors for a perfect healthy side dish or meal. It’s a favorite to take to any family gathering or BBQ.

By now you may know that I am all about simple recipes. Plus, it’s a big ole bonus when it’s loaded with amazing flavor too! This Balsamic Broccoli Slaw is one of my favorite little side dishes that is so easy to make for a summer side dish or a healthy, light lunch.

BROCCOLI SLAW

I originally got this recipe from a neighbor years and years ago when she brought it to a cookout we were hosting. I couldn’t get enough of it! The added crunchiness of the ramen noodles and sliced almonds completely sold me.

The only broccoli slaw I have ever had (growing up a Southern girl) was made with mayo and raisins. Not that I didn’t love it, but this version made with balsamic vinegar is just SO good!

This recipe is very quick to make! If you want to make it more of a “meal”, adding thisItalian grilled chicken to it is fabulous, too, by the way!

INGREDIENTS

1 16 oz bag of Broccoli Slaw (the one I buy has broccoli, carrots and red cabbage)

¼ cup of olive oil

¼ cup of balsamic vinegar

1 tablespoon of sugar

1 teaspoon of garlic powder (or a little more if you like more garlic)

1 package of Beef Ramen noodles, broken into pieces

½ cup of sliced almonds

¼ – ½ cup of roasted sunflower seeds or pumpkin seeds (I like more of the ½ cup)

Optional: the seasoning pack from the ramen noodles can be added to the dressing mixture if you’d like.

DIRECTIONS

1. Pour the package of broccoli slaw in a large mixing bowl.

2. Mix the olive oil, balsamic vinegar, sugar and garlic powder in a dish.

3. Add the broken up Ramen Noodles, almonds and sunflower or pumpkin seeds.

4. Pour the dressing mixture over and stir until completely mixed.

5. Refrigerate for at least an hour before serving.

Ingredients

  • 16 oz bag of Broccoli Slaw the one I buy has broccoli, carrots and red cabbage
